Why do boutique hotels pick mattresses differently than big chains?

A large chain is usually buying for thousands of identical rooms, so the mattress tends to be a line item: a contract-grade bed built to hit a price point, often a version you can't actually buy at retail. That's not a knock. At that scale, standardization is the job.
